After being cut down and cleaned, the fish is put into a special freezer that freezes the product solid in 45 seconds. This quick freezing process allows the water inside the fish to freeze solid without ice crystals forming and damaging cells, causing a mushy product. We get all of our fish products shipped to us frozen.
